On Aquaponics and Earth’s sustainable farm, tilapia pools teeming with fish come up against rows of organic plants, which they hydrate via the farm’s energy-efficient growing and waste-recycling system. Founders and aqua-farmers John and Teresa Musser began experimenting with high-yield aquaponics in response to the crushing poverty they saw abroad and invented much of the equipment and methods they use in the search for a sustainable, affordable system they could share with the world. The Mussers have worked around the globe in orphanages and small villages since 1979 but began shifting their focus to infrastructure and education work to bring easy-to-learn agricultural techniques to impoverished areas.
The Mussers maintain their DeSoto farm not only to grow food, but to act as an educational resource for people who want to observe their methods and build their own aquaponics systems. Their organic microfarm, populated by rabbits, goats, microcows, and vermicomposting bins, harvests hundreds of pounds of produce each year on minimal substrate. Inspired by their frantic efforts one year to absorb a surplus of produce, the Mussers lead regular canning classes where students learn the proper ways to can seasonal veggies, meats, and blown kisses.
Lined with scenic crape myrtle trees and pampas grass, Stonebriar Polo Club's regulation-size polo field stretches an expansive 48,000 square yards to host the fast-paced and challenging sport atop trained steeds. Equestrian instructors inaugurate students to the basics of polo in both private and group lessons, creating an intimate social setting to better learn the rules of the game and to reduce horses’ stage fright. Tailoring lessons to the level of comfort riders have in the saddle, instructors prepare students for the game with lessons on the rules of polo, mallet work, horse commands, and scoring. The club spans 60 scenic acres, augmenting the playing field with a Spanish-style pavilion ideal for watching games, socializing, and taking bets on which horses are two undercover journalists in costume.
Premier Baseball Academy's instructors draw from their experience at the high school, college, and professional levels to help hone skills of players ranging from little leaguers to pros. In private and group lessons, the bat-swinging experts focus on areas such as strength and arm velocity with equipment including pitching mounds and five Iron Mike batting-cage machines that dispatch balls at adjustable speeds. The instructors hold practices for entire teams and lead camps that aim to cover all mental and physical aspects of the national pastime. The Academy also hosts several tournaments throughout the year and serves as a rescue shelter for stray team mascots.
