Beatrice Country Club’s 18-hole course unfurls across 7,169 yards of Nebraska countryside for a par 72 course that blends elements of woodland golf and a traditional, links-style layout. The majority of the course’s fairways tunnel through tight tree lines that temper aggressive impulses at the tee box like a caddy studying to be an anger-management therapist. Encroaching timbers vanish for a stretch, during which relatively open fairways run alongside water hazards and thickets of tall grass, affecting the landscape of golf’s seminal Scottish links. With five tee options, the course caters to clubbers of all stripes. Arching drives trace the sky at the onsite driving range, where duffers prepare for their round and practice balls efficiently sign waivers before launching themselves into the stratosphere.

The nine-hole executive course at Pine Lake Golf & Tennis Club—designed more than four decades ago for the use of homeowners in the Pine Lake housing area—today welcomes golfers of all skill levels and domicile locations. Beginners tackle the course’s straightforward fairways and greens, whereas skilled golfers can hone their short game on holes ranging in length from the 111-yard seventh to the 185-yard fifth. Although the concise fairways demand precision, they don’t foil golfers with the obstacles of other courses, such as sand traps, water hazards, and riddle-slinging bridge trolls. After swinging through a round under the gaze of the Pine Lake water tower, players can head to the tennis courts or drop by the pro shop to pick up new tees for staking pesky pint-sized vampires.

When Nate Kellison was brainstorming a unique idea for his restaurant, he consulted one of his most trusted culinary sources: his mom. She reminded him of reuben rolls, a treat she'd often made for him and his brother when they were young. The idea was simple enough: take the sandwich's ingredients and roll them all up in dough. To give them an even more unique look, Nate's wife suggested they make them as little pot pies. And just like that, Round-Abouts was born.

Today, Round-Abouts doesn't just serve "rounds" stuffed with reuben ingredients. There are also mini pies stuffed with pizza fixings, barbecued chicken, broccoli and cheese. All of these options share the menu with breakfast flavors and smaller dessert versions filled with chocolate or fruit. To maintain the homespun vibe, Nate invites local musicians and artists to share their work in his restaurant.
