When perusing some of Pepper's more elegant entrees, such as fresh, oven-roasted salmon in an herb crust or homemade spinach pasta stuffed with an artichoke-cheese blend, it's hard to imagine that it started out just serving deli sandwiches nearly 40 years ago. Of course, they still serve those, giving customers the option to build their own or order a specialty sammie like the PBLT with pimento cheese.
Another thing that hasn't changed is the eatery's commitment to an eco-friendly environment. They were the first restaurant in Boone to go smoke-free, and were an early adopter of recycling or reusing all glass, plastic, cardboard, aluminum, and chairs used onsite. Earlier in 2014, Pepper's even introduced compostable takeout containers made from recycled materials.
