The founders of Salud Whisky & Wine Bar have turned their passion for spirits into a massive collection?one that includes more than 125 wines and 150 whiskies. The bar's inventory features products from around the globe, but focuses primarily on wines and whiskies that have been crafted or grown in Washington. Visitors can dip into both selections on a daily basis, all while soaking up recommendations from Salud's wine- and whisky-wise staff. They can also try out the bar's own barrel-aged cocktails: pre-mixed drinks that have gone through the same aging process as other distilled spirits in order to alter their character and flavor.
During a stretch of economic hardship, Brad and Lisa Havens decided to trade in their worry for a tandem bicycle, on which they rode to wineries, outdoor concerts, famers markets, and art festivals over the stretch of nearly 1,800 miles. On this mobile sojourn, the Havens eventually pedaled their way to the idea for Tandem Dinner and Wine Bar.
In the comfy eatery, a constantly changing selection of local Northwest wines complements Brad’s contemporary take on American classics, including butternut squash ravioli, crab cakes made with local Dungeness crab, and mac and cheese. Besides crafting menu items from local, organic ingredients, Brad also leads cooking classes to share his skills with customers.
Paying homage to the epic journey that started it all, they mounted a tandem bicycle to the outside of the new restaurant. To decorate the rest of the space, they collected pieces inspired by the feel of their own home, with history behind each item. Live music fills the space with laid-back atmosphere during concerts held three nights a week.
The bracing Italian-style brandy known as grappa flows from a vintage hammered-copper still and into oak barrels for aging at Soft Tail Spirits, a craft distillery that gathers its grape pressings from local Washington wineries. An Old-World still's 58,000-BTU burners boil up fresh batches of grappa, with characters of pear and apple-tinged Giallo and the pleasingly grainy sangiovese. Meanwhile, a multistep distillation process whips up batches of Soft Tail Spirits' sipping vodka, the slightly rebellious offspring of Washington State apples that took home the bronze at the 2010 World Spirits Competition in San Francisco. Lead distiller Matthew welcomes visitors to the distillery for tours in which he shows off the facility, including the hammered-copper alembic he affectionately calls “Maggie,” before doling out samples and bestowing grappa converts with souvenir glassware for future bacchanalian feasts or Flat Earth Society meetings.
You won't find a single cork at Piccola Wine Company. That's because the sellers store their locally made wines in stainless steel kegs. While tapping wine may seem unusual, the company believes the process saves more money, hassle, and environment than traditional bottling. Take Piccola's signature tote?it holds the same amount of wine as two 750 ml bottles, and can last for one month after opening. For those who need wine in bulk, whether it's for a party or to dye a lawn purple, Piccola also packages its reds and whites in growlers, mini-kegs, and whole kegs. Rob Entrekin's transformation from biomedical engineer to professional winemaker began with a simple question: what makes a wine taste great? This question birthed Finn Hill Winery's small-production wine philosophy. With an emphasis on detail and quality, each single-varietal, single-vineyard red or white wine comes with a distinct terroir.
Within the community is the neighboring Convergence Zone Cellars. Using grapes from premium Red Mountain AVA vineyards, winemaker Scott Greenmaker produces 950 annual cases of renowned red blends, Malbec, and white varietals. Guests can also partake in some of CZ's newer offerings, such as a Red Mountain Pinot Gris, Cabernet Sauvignon, and a Mourvedre-Syrah blend.
Woodinville is also home to Kaella Winery. With grapes from Ciel du Cheval Vineyard, Kaella produces 500 annual cases of hand-crafted signature red wines. In addition to a small number of area stores and restaurants, guests can partake in the family-owned winery's selections at their tasting room. Bottles are also available for purchase online.
