Established in 1970, Coto Valley Country Club enriches the lush landscape of the Coto De Caza Valley with acres of family-friendly facilities dedicated to sports, fitness, and relaxation. Atop the blue-and-green plane of 10 tennis courts, players can hug the baseline, return heated serves, or weave yellow ball fuzz into the net during friendly matches or lessons from one of the resident aces. Idyllic trees and rustic riding trails surround the equestrian center, where horses bound over hurdles at the show-jumping course or dart across the polo field. Even though Rocky Mountain Chocolate Factory has locations throughout the world, it still maintains the small-town candy-store feel envisioned by its creator and CEO, Frank Crail. Crail founded the original location in his adopted hometown of Durango, Colorado, filling the sweet-smelling space with homey accents, such as candy-making demonstrations and games of Pin the Tail on the Chocolatier. Behind the counter, staffers roll fresh granny smith apples in dense caramel and mold lumps of rich fudge on old-style marble slabs. Other fresh confections include mint bark, chocolate-dipped pretzels, and boxed chocolates.
The skilled chefs at Spike’s Fish House grill a rotating cast of 8–10 daily fish specials to fill salads, rice bowls, and other entree options. A freshly cooked fillet can play hide-and-seek with forks in a salad’s nest of field greens, cucumbers, and roma tomatoes or bounce on the bowl’s bed of white or brown rice to the consternation of babysitters who insist it’s time to sleep.
