Operating under the mantra that fly-fishing isn't a hobby but instead a lifestyle, St. Peter's Fly Shop prepares anglers of all experience levels for success on the stream with classes, gear, and an encyclopedic knowledge of man's gilled adversary. Two Fort Collins locations sit within close proximity of local fishing hot spots, including the waters of Rocky Mountain National Park—famous for its placid lakes made from pastels on canvas—and the Poudre River. There, the staff leads educational courses and guided trips that spend equal time with instruction and hands-on fishing practice, allowing students to perfect the often-difficult art of casting with finesse and accuracy. Back at the shop, customers reel in top-notch equipment such as Winston rods, Simms waders, and Brodin nets, which are sturdy enough to secure a bucking trout as it tries to nestle in the hammock.
Named after the famed surfing destination in Australia, Bondi Beach Bar brings the laid-back atmosphere and casual fare of Down Under to Fort Collins. Chefs fire up the grill to prepare shrimp, scallops, and fish fillets, spearing them on skewers or serving them alongside a dunk-worthy side of sweet chili sauce. You can pair the menu’s surf and turf offerings with local microbrews from New Belgium and Equinox or refreshing glasses of Australian wine.

It took Vincent Van Gogh years to complete his masterpieces, but students at Vino and VanCo classes only need a few hours. After fueling up on appetizers and drinks at Bondi Beach Bar & Grill, the class's pupils head over to Old Town Square. There, canvases, easels, and paints all await alongside that night's Van Gogh image, which the class recreates with the help of an expert instructor.
While Vino and VanCo students reproduce a renowned genius's work, most classes at VanCo School of Art are geared toward helping future masters refine their own pieces. Instructors train students of all ages in essential techniques, such as rendering semi-clothed models with materials like oil paint or charcoal still smoky from the grill. VanCo additionally caters classes to homeschooled pupils, as well as high school students readying their portfolio for college admissions.
