Energetic classic rock outfit Thermal Fusion fills the air with a catchy live soundtrack, as staff fill commemorative wine glasses with endless samples of Dionisio's delicious wines. With food, wine, and tunes provided by Houston-based bands and businesses, the fest is a better way to celebrate the local culture than nibbling sandwichs into the shape of the Astro's stadium.
Since 2006, La Fuente Winery has brought the flavors of Chilean wines to Texas, winning recognition at the Houston Rodeo International Wine Competition for their varietals. Most notably, they produce a spicy carménère red wine, a grape very similar to merlot that was wiped out by disease in France. The vines survived on the shores of Chile and worked their way into bottles of uniquely Chilean vintages.
When Enchanted Manor Winery's chief mead-maker handcrafts his honey brew, he follows a recipe from a 17th-century cookbook from the court of King Charles I. These medieval techniques inspire the winery's special mead for the annual Texas Renaissance Festival, which is brewed from Texas wildflower honey and sipped from knightly knee cops. Enchanted Manor also whips up modern meads flavored with orange blossom and oak, mixed with pear wine, or brewed from the honey of the guajillo flower.
In addition to its signature meads, Enchanted Manor Winery whips up small batches of wines from grapes, peaches, and other fruits, and augments their stock with bottles from nearby wineries. Enchanted Manor also hosts special events such as sangria nights, mead tastings, and wine classes.
Water 2 Wine has a deep understanding of the wine making process, which is apparent from the company’s collection of 50 medals won at various international wine competitions. With 10 locations across the U.S., the company welcomes guests from all over to come and see what all the buzz is about firsthand. Visitors can sip on the low-sulfite and histamine-free wines made on-site, create their own batches of vino replete with custom labels, and learn proper wine etiquette during education classes.
In true farm-to-table fashion, Chef Coco Hogue of Tabella at Clear Creek Winery sources the majority of her ingredients from onsite gardens, local farmers, ranchers, and other homegrown producers. Each day before dinner service, she strolls through the restaurant’s backyard picking items for the day’s menu such as herbs, baby vegetables, and forks from the silverware tree. As a photographer and painter, Chef Hogue believes in beautiful presentation, which she achieves by delicately plating entrees such as coffee-rubbed pork loin and grilled quail with sides such as potato gratin and brussels-sprout hash. During three- to twelve-course dinners, fresh seafood found within 5 miles of the restaurant is one of four protein choices, and it is prepared to match the evening’s wine selection.
Handcrafted wines flow freely inside the elegant tasting room of Clear Creek Vineyard & Winery. Made with grapes sourced straight from the sunny vineyards of Texas and California, varietals such as cabernet sauvignon, malbec, sangiovese, and chenin blanc line the racks along the walls and are available to taste by the pour right at the bar. The Clear Creek team was recently joined by executive chef Michael Calvino, who has crafted a farm-to-table menu ideal for wine pairings and also oversees multi-course vintner dinners.
