According to lore that has been passed down through the Lucio clan, one of the family progenitors was kidnapped from her native Chihuahua after Pancho Villa tasted her food and decided he needed her as his chef. That distant matron’s culinary wizardry trickled down the family tree and currently informs the cooking of her great-great-grandchildren at Armadillo Restaurants. Chefs at the restaurants use those generations-old recipes while gently patting cornhusks into place around meal and shredded pork or simmering red-chili sauce for enchiladas. Since the Lucios converted the first Armadillo Restaurant from a tough-guy bar into a restaurant in 1972, they’ve opened six additional locations in the Front Range.

At Señor Camaron, chefs season fresh fish fillets and tender steaks with poblano peppers, tamarind, and cilantro. The menu's Mexican seafood tastes mirror the eatery's beachy decor—patrons sit in palm and leather seats under wall-mounted sharks, colorful flags, and lifeguards who enthusiastically blow their whistle every time someone cleans their plate.

A popular Texas-based restaurant, Fuzzy's Taco Shop makes its Colorado debut, providing new Tex-Mex tastes with a bountiful menu straight from the South. Baja-style tacos top the menu as the restaurant's specialty and brim with cilantro, cheese, garlic sauce, feta, and a choice of fish, chicken, or pork ($1.99 each). A jumbo burrito plump with grilled- or tempura-shrimp stuffing bursts with garlic sauce and guacamole ($5.99), and breakfast favorites such as the huevos rancheros sate late-risers with savory, eggy flavors ($5.99). Diners dive into their eats perched in bright-red booths surrounded by primary-color-splashed walls, forming an environment as bright and fun as a bonfire of old toys.

Since its inception as a single Fort Collins eatery almost 20 years ago, Big City Burrito has spread its wings across Colorado and Nebraska, presenting a menu of create-your-own burritos, tacos, and the like composed of fresh fillings and made-from-scratch tortillas. Just as all buildings start with a steady foundation of flour and water, all burritos begin with a good tortilla. And Big City offers half a dozen options, such as tomato-chili and jalapeño-cheddar. After picking a tortilla, customers can start relaying their order to the kitchen crew, be it for a burrito packed with chicken mole and topped with mild pico de gallo or a carne asada taco with a dollop of salsa de lupe—the restaurant’s special blended hot salsa. Customers also can choose to have the decadent fillings and salsas served simply atop a plate of rice and beans or stuffed inside a fresh-made quesadilla. Besides crafting meals day and night, Big City also serves breakfast burritos for both adults and kids and offers catering services, which include burrito bars and boxed lunches for large groups or corporate events.

With a menu comprised only of two sections—'before tacos' and 'tacos'—T/aco's chef Matt Collier understands the power of the white-glove approach. In a recent interview, he divulged to Thrillist that each tortilla, like everything else on the restaurant's menu, is handmade. Harnessing a diverse culinary palette of fresh herbs and ingredients to craft bold flavors, Chef Matt and his team top their braised pork belly, Ahi tuna, and veggie tacos with such gourmet fixings as poblano crema, queso cotija, and chayote-squash salsa. To add a touch of diversity to their taco-heavy menu, they whip up fresh ceviches and guacamole with housemade chips. T/aco's bartenders have also honed an all-important craft. They mix smoky and fruity margaritas with 25 reposado, anejo, and blanco tequilas—one for each year an American must live before she can eat tacos in the US House of Representatives.
