So when the spray of fire hydrants wasn't chilly enough to keep kids cool, Uncle Louie decided to whip up some Italian ices for the neighborhood. This became a tradition on the block, and then the neighborhood, and eventually, grew into a fully-fledged business: Uncle Louie G's Italian Ices & Ice Cream. Though there are now outposts of this Brooklyn institution all across the U.S., staff still whip up Italian ices using Uncle Louie's old-fashioned recipes. Enjoy scoops full of Italian ice in a range of sweet flavors, from root beer to lemon to decadent peanut butter chocolate cup. They also use Uncle Louie's recipes to create ice cream flavors such as pistachio, butter pecan, and apple pie a la mode?the latter of which combines rich vanilla ice cream with actual chunks of the dessert to create a flavor as all-American as a photo of Henry Fonda wearing a hotdog costume.

Then they'd know that the "equation" translates to vanilla ice cream, chocolate fudge, and marshmallows?resulting in a sort-of s'more sundae that should be kept far away from campfires.

Chill-N's science-class vibe is inspired by the ice cream itself, which the shop creates by flash-freezing ice-cream or yogurt with pure nitrogen. Customers start by picking either ice cream or yogurt as the base, then flavor it with natural ingredients like pure vanilla or some of the 60 pounds of Nutella that Chill-N goes through each week. They also get to blend in any of the nearly 20 mix-n's on the periodic table, including little-known elements such as gummy bears (Gb) and Pop Tarts (Pt). The shop mixes it all together, then adds a hefty blast of liquid nitrogen. Because everything is frozen so quickly, it produces ice crystals much smaller than any you'll find in mass-produced ice cream and incorporates almost no oxygen, resulting in a thick, silky mixture that the Miami New Times called "the creamiest ice cream you'll have in Miami."

When Danna and Adam Caldwell went to a frozen-yogurt shop on their first date, they didn't realize how much it would change their lives. Not only did they each end up finding the person with whom they'd spend the rest of their lives, but also they found what they wanted to do for the rest of their lives together. Eventually, they opened Menchie's Frozen Yogurt, which now has outposts across the nation. Like the Bill of Rights, the business is represented by a series of mascots––led by Menchie himself––to create a fun family experience.

No matter where the store is, however, the staff members start the process with a signature ingredient: protein-rich California dairy milk. They use this as the base for their probiotic-filled yogurt, and add only all-natural ingredients to create their roster of flavors. These satisfy a variety of dietary restrictions, resulting in flavors such as no-sugar-added coffee and low-carb candy cane. At the toppings bar, guests customize their chosen flavors with a sprinkling of candy, fresh fruit, syrups, and marshmallow cream.
