"Vin hesten," a Norwegian phrase meaning "wine horses," is an appropriate title for a stable located right in the middle of Temecula Valley's wine country. And though wine and horseback riding is a major draw for tourists and locals, Vin Hesten Trail Adventures has a far more humanitarian pursuit. Every trail horse onsite is a rescue from a neighboring ranch that may otherwise have been sent to auction or slaughter. Guests can stop by for a quick lesson, purchase gear, or opt for a guided trail ride through the lush outlying wine country.

"The haunting melody of a howling wolf pack is heard in only a handful of states, as wolves have been exterminated from a vast majority of their original range," explains the California Wolf Center's website. Though these howling cries are harder to find than they once were, one place to witness their grandeur is at the California Wolf Center.

The non-profit was founded in 1977 to educate the public about wildlife and ecology, specifically the history and behavior of the gray wolf. Located 50 miles east of San Diego, it houses two subspecies of wolves: the Alaskan gray wolf and the endangered Mexican gray wolf. The center also participates in the Mexican Wolf Species Survival Plan, which aims to help the endangered species recover in the wild. At the facility, wolves live in enclosures that can help retain their natural behavior, as some of them will eventually be released back into the wild.

As the day begins, guests have the opportunity to enter prize giveaways and mingle with professional wedding vendors at the bridal show to discuss photography, floral arrangements, and tips on converting a wedding gown into a yurt. Afterward, a limo sweeps nearly newlyweds away to ponder seven potential mountain venues for vows or receptions: Marina Resort, Northwoods Resort, Alpenhorn Bed and Breakfast, Best Western Plus Big Bear Chateau, Inn Der Bach, Gold Mountain Manor, and Arrowhead Springs. While touring the resorts, soon-to-be brides and grooms sip refreshments and silence rumbling stomachs with the provided lunch, while newly gained knowledge helps nix pre-formed plans for breadstick wedding bouquets and uncle-led polka bands.

But, its curriculum is tailored entirely to nonnative English speakers. The Intensive English program, a nearly full-time eight-week course, represents the core of the curriculum. The course helps students climb through five levels of English aptitude, from beginner to advanced, and quickly shapes their reading and writing skills, grammar, and speaking and listening abilities. Students can also opt for goal-specific programs, such as GED or university prep.
