Nestled inside of a charming, renovated home in the heart of Fort Collins, the Rainbow Restaurant has served up fresh, creative vegetarian- and vegan-friendly fare for more than 30 years. Dynamize dormant taste buds with Rainbow Restaurant's expansive breakfast menu, which holsters a vast selection of omelettes, breakfast burritos, and pancakes. Early-morning biters can perch serrated ivories on the banana rum french toast, topped with grilled bananas, butter-rum sauce, whipped cream, and walnuts ($8.25). Or graze on vegan-friendly a.m. comestibles such as the tempeh sauté, made with fresh spinach, mushrooms, and black beans and sprinkled with onions and tomatoes ($7.95). Unlike the debut albums of celebrity parrots, the focaccia pesto pizza's disc engages crowds with a melodious mixture of grilled bell peppers, onions, mushrooms, tomatoes, and feta and jack cheese ($8.50). For die-hard or dabbling meat eaters, Rainbow Restaurant offers a plethora of carnivorous dishes such as the chicken burrito platter ($7.95) and the chicken ziti ($8.95).
Qdoba Events Center hosts a range of sporting facilities all while maintaining both winter and summer climates in its 55,000-square-foot building. The indoor turf field provides a venue for soccer, lacrosse, and football. Alternately, the indoor ice rink facilitates hockey games for adults, children, and lonely Zambonis after everyone leaves for the night. Pickup games and leagues are available for athletes of all stripes, and guests can book the facility for parties complete with access to facilities and food from the on-site kitchen.
With very few trees on the course, golfers' views of the Rocky Mountains—which soar across the western horizon—are seldom obstructed at Saddleback Golf Club. The open terrain also makes the lengthy, 7,090-yard layout more manageable, as golfers can consistently reach for their driver off the tee. Even with an open expanse, golfers are constantly challenged, as most of the course's greens are heavily fortified with sand and grass bunkers, and two holes—the par-three 4th and the par-four 16th—feature de facto island greens, almost fully wreathed by water hazards. Simply reaching the putting surface does not guarantee a good score, as the course's large, multi-tiered greens will make for many long, hard-to-read putts. To prepare for the round, golfers can take a flyover tour of the course.
Though the course is a serious challenge, Saddleback Golf Club encourages golfers of all stripes to enjoy their time on the links. While the scorecards at most clubs include a recitation of basic rules and etiquette, Saddleback's card strikes a much more laid back tone, imploring players to "have phun" and "kick your ball if you hit a bad shot," while reminding them that "scoring is optional." The carefree vibe extends to the Club's instructional programs, where golf pros pass on birdie-hunting wisdom and caddie scolding tactics.
