In the 13 years since it was founded, the Food Network South Beach Wine & Food Festival has grown into a four-day destination event featuring some of television's best-known chefs and eaters. The lineup always offers tons of educational seminars, tastings, demos, and dinners?and this year is no different. From February 20 through 23, the beach sizzles with celebrities such as Anne Burrell, Bobby Deen, Rachael Ray, and Robert Irvine.

That's why employees temper their enthusiasm for the sea with a reverence for its power, and safety always comes first when they splash into the water with students. Students can work on balance, strength, and stamina while gliding across Miami Beach's calm waters on a standup paddle board. Lessons, rentals, and tours are available for groups, or individuals can opt for private lessons. The type of student depends on the season. In the fall and spring, winds flow across the Miami waters at a pace steadier than weight gain during the holidays, making the waves perfect for kite-surfing. And when it dies down a bit during summer months, standup paddleboarding rises to prominence. With the help of Relentless Watersports' water-powered jet pack, it only takes a few seconds to go from lazily floating on the surface of the water to shooting through the sky. An instructor engages the jet pack's hand throttles, triggering its 200-horsepower engine to send streams of water coursing through a 10-meter hose, which in turn churns the water around you to launch you gracefully into the air. You can reach heights of up to 30 feet, much like a very tentative and cautious eagle. This process might sound intimidating, but that's where the certified and CPR-trained instructors come in. They teach aquatic explorers the safety rules and techniques necessary to operate a JetLev jet pack, covering how to literally walk on water, hover above the water's surface, and turn on a dime.
