Gene Leiterman spends his days at a culinary college teaching the art of pastry making and his evenings at CocoFlow Chocolate Cafe molding his favorite medium. His chocolate handiwork ranges from truffles infused with rose syrup to edible sculptures--he once carved a 20-pound chocolate Easter bunny, which proceeded to lay several Cadbury eggs. He's also filled the café's menu with slices of cake, fresh crepes, and hand-painted bon-bons, such as the pistachio crème with swirls of colorful cocoa butter. During CocoFlow's hands-on weekend classes, students learn to craft their own chocolates using machinery-free European techniques that they can replicate at home.

In Paciugo Gelato & Caff?, you quickly find yourself right in the middle of Italy. Dark, rich espresso pours into cups, and a display case reveals velvety gelato flavors, each handmade onsite from fresh ingredients and amid fresh oxygen. The vision for this sweet alcove comes from founder Cristiana Ginatta, an Italian native who fell in love with her grandfather?s handmade gelato at a young age. Cristiana grew up in Italy, where she also attended culinary school with an emphasis on gelato making. In the late '90s, Cristiana and her family moved to Dallas, Texas, and she opened the first Paciugo Gelato & Caff?. The business has now expanded into dozens of locations across North America, each one filled with coffee, frappes, and gelato cones in more than 150 flavors.
