After publishing his first cookbook, Edward Pankonin decided he wanted to take a more hands-on approach to teaching others about food. He wanted to expand on what he'd written about his Italian family, dating back to their American emigration in the late 1800s?and share their beloved recipes with even more people. And so, he and his wife Nora opened a cooking school and named it for his book: Simple & Fresh. This school doesn't just teach recipes, though. Modeled after the cooking schools of Italy, Simple & Fresh relies on fresh ingredients and sources flavors the Pankonins found throughout their travels, including that one time they raided an olive baron's pantry. During regular and specialty classes, students delve into seasonal dishes, learn Italian bread-baking or stuffed pasta-making, and prepare regional dishes from across Italy. Every session is completely hands-on and allows participants to experiment with the techniques they learn. To help students replicate these recipes at home, the school's grocery offers imported and housemade goods such as rustic pasta sauces, extra-virgin olive oil, balsamic vinegar, and baked desserts.

Using the experiences gained during years as a professional racecar driver and builder, Competition 101 Racing School founder Stuart Lycett trains the next generation of podium finishers during one-on-one racing lessons. Whether behind the wheel of stock cars, Trans Am T2 sports cars, sprint cars, or open-wheel cars, pupils soak in on-track experience on dirt tracks, short ovals, speedways, or road circuits while radios and on-board video cameras record every turn for scrutiny during future feedback sessions. In addition to their introductory class, instructors also offer one-, two-, and three-day school programs. After the three-day program, studious speedsters may complete their training by competing in a sanctioned race event in front of paying spectators and a real checkered flag. Stuart and his crew also welcome interns willing to work for six months in exchange for a free three-day racing school program.

At The Jam Spot, kids can master math concepts, expand their Spanish vocabularies, and raise their voices in sing-alongs?or they can simply play. The center functions primarily as a play zone, but the team also hosts classes for ages 2?6, along with one-on-one tutoring for grades K?12. In the 1940s, Walt Baptiste and his son Baron created a new branch of yoga?called Baptiste yoga?that combines the principles of yoga, meditation, and inner reflection. The Baptiste-yoga movement grew rapidly, and in 2005, senior Baptiste teacher Mark White introduced his community to the practice with two studios. He and a staff of more than 20 certified yoga instructors guide students from pose to pose while observing proper alignment and breathing technique. Studios are heated to 90 degrees to keep bodies limber and destroy any ice cream that enters the building.
