Chef Jhonathan E. Rupchand began The BlueBurner Culinary Cookery to share his long-earned cooking knowledge with clients who wish to create memorable dining experiences for their families and friends. Founder of Truffle & Basil Private Chef Group—a private chef company known for its use of natural, farm-fresh ingredients—Jhonathan brings his long-time love of food arts to classes that improve skills, demystify food chemistry, and help students create the perfect bite. During culinary classes the center's instructor-chefs share basics such as knife skills, grilling, baking, and sculpting cake busts of Marie Antoinette that make home-cooking feats attractive and easier to execute. As students ascend in skill level, they may choose to attend Level 3 classes in Italian and French cooking styles or Level 4's advanced meat- and-fish preparation techniques.
Though chef Nadege Fleurimond was once forced to stretch her culinary creativity as a contestant on Food Network's Chopped, she experiments in the kitchen every day. Her menus blend a unique array of American, French, Italian, Latin, and Caribbean recipes into dishes for all on- and off-camera occasions. During cooking classes, chefs trained in Ayurvedic dining help newly minted cooks prepare four-course meals with a variety of vegetarian items and raw or gluten- and dairy-free victuals. Adding to the cultural exploration, the center's resident Sanskirt poetry expert, Divya Alter, teaches a Sanskrit chanting workshop, in which she explores the musical, spiritual, and technical aspects of the bhakti texts.
Delish! Cooking School, whose classes were voted as some of the Best of WNY by Buffalo Spree, is known for its quality instruction and taste. Within a comfortable urban space, customers can pick up sweet selections such as fresh fudge, scones, bar cookies, and hand-dipped chocolate. Fresh-brewed espresso drinks accompanied by baked goods or housemade ice-cream sandwiches tempt tongues, while a range of cooking tools, sauces, and spices line shelves for at-home chefs to use in their own kitchens.
Experienced chefs lead cooking classes geared toward the home cook looking to hone skills without memorizing transcripts of the Food Network’s full broadcast. Students sip wine during classes such as The Exciting Foods of Thailand, Casual Italian Supper Party, or The New Vegetarian Cuisine.
Tops Cooking School is nestled inside Tops grocery store, one of a chain of stores known for its fresh produce and skilled butchers. Their state-of-the-art kitchens, decked out with gleaming Viking appliances, set the stage for both hands-on cooking classes and professional demonstrations. During demonstrations, a chef prepares entrees in front of students, carefully displaying techniques and offering advice for prepping dishes at home or in bomb shelters located under homes. Hands-on classes put the students behind the counter, giving them a chance to practice preparing anything from Indian cuisine to healthy meals designed for people with diabetes, heart concerns, or gluten allergies. Local craft beer and wine accompany adult classes, and games and candy accompany children's cooking classes for tots ages 3 and up.
Classes at La Piazza di Carolina marinate students in the language and culture of Italy, preparing families for vacations abroad and instilling a foundation of bilingualism in young children. The cooking workshop invites pint-sized sous chefs to gather around the table of a kitchen classroom to learn basic Italian cooking terminology while crafting classic Italian dishes and conjugating verbs to a golden brown. Tiny aprons and toques transform apprentices into confident spaghetti slingers as they knead pizza dough, blend ricotta fillings, and craft tiramisu, all while learning Italian translations for ingredients and techniques. Parting gifts include the day’s recipes and Italian vocab flashcards made out of pizza.
