There's no one way to create the perfect hot dog, at least not at Fletch's. Sure, their cooks start with the basic Chicago-style toppings—mustard, relish, onions, tomatoes, pickle, sport peppers, and celery salt—but that's only the foundation. From there, they can add a dollop of chili, sprinkle on cheese, or twist the hot dog like a balloon animal. They top beef, turkey, chicken, or veggie burger patties with your choice of condiments, and, upon customer request, they make cream puffs for dessert. Fletch's menu includes meals for dine-in, delivery, or catering.
The clean and simple design scheme of a striped awning, weathered bricks, and street-side tables that marks the front of Hot Cajun Seafood (formerly BFC Seafood) matches the business’s succinct menu. Its brevity allows cooks to perfect the main element of each entree, including crispy chicken wings, ocean perch, catfish nuggets, and oysters. Fish and chicken also retire to parlors located inside sandwiches along with meats such as roast beef and pastrami; and a Middle Eastern section of the menu describes platefuls of hummus and kebabs. But perhaps the most popular page is the dessert section, where pie and cake reign.
A steady and familiar sizzle keeps the kitchen moving at Quick Bite. As the fryer puts the finishing touches on the chicken and seafood specialties, the kitchen crew assembles sides such as potato salad, coleslaw, macaroni salad, and hush puppies. Quick Bite's most popular dishes include whole chicken wings and popcorn chicken, as well as catfish, snapper, and sole. The fish can be ordered alone, as a combo with chicken wings, or on a roll as the Fast Eddie sandwich. Fried prawns, breaded oysters, and breaded scallops are also available to complete one's daily requirement of items in the food pyramid's underwater base.
Bottles of Belgian beer, including Duvel bottles and Tripel Karmeliet, sit on a shelf above murals of steins and pink elephants inside Cafe Biere. Between sips of imported brews, patrons can dip into kettles of mussels or bite into the glistening patties of bistro-style burgers, which are made with lamb or beef from nearby Niman Ranch. On weekends, patrons can scarf down farm-fresh eggs or drink 20 flavors of bottomless mimosas freshly milked from champagne-producing cows. The bistro's golden walls mimic the hues of the poached eggs seen next to puddles of rosemary brown butter on plates carried aloft by waiters.
Aiming to sate appetites and warm spirits, Bootstrapper features a menu of classic, made-from-scratch southern and soul food. Fried golden catfish and snapper fillets pile on top of crispy fries or next to sides of potato salad, and daily dinner specials range from meatloaf paired with pillowy mashed potatoes to smothered pork chops served with rice and gravy. Chefs build breakfast platters around fresh hotcakes, grilled beef hot links, and lightly fried salmon croquettes. Diners can add a sweet touch to the end of their meal or food fight with scrumptious desserts such as peach cobbler, lemon cake, and sweet-potato pie.
When he cofounded his first sandwich shop in 1965, 17-year-old Fred DeLuca planned to use his profits to pay his way through medical school. But the combination of quality ingredients and friendly service at the shop—then called Pete's Subway—proved so popular that nine years later, he and his partner found themselves in charge of 16 locations across Connecticut, and Fred left behind his doctoring plans for a career in business.
Today, Subway restaurants number over 34,000 around the world—almost as many shops as there are sightings of Elvis buying cold cuts. At each location, staffers pile sliced ham, marinara-slathered meatballs, and other fillings into halved loaves of bread before customizing handhelds with tomatoes, shredded lettuce, and other healthy toppings plucked from chilled containers behind the counter. Salads free crisp veggies from bread's overprotective embrace, and crunchy baked chips or apple slices accompany entrees to tables. Subway's website also facilitates health-conscious eating by listing each item's nutrition information and fastest mile time online.
