It started as a simple idea shared by two moms. Karen Bain and Lisa Kudrika wanted to make their favorite dessert, shave ice, “hip and trendy,” according to 805 Living magazine. So when they opened Shave It—which recently celebrated the grand opening of its new Tarzana location—they made sure to express their sense of style with chic interior design inspired by water, ice, and snow. Inside the shop, blue plexiglass hangs like icicles over steel tables and chairs. Flat-screen TVs broadcast shots of surfers and snowboarders, and a colorful floor changes design with every step.
Each cup of fluffy shave ice comes drenched with fruity “flavas” flown in from Hawaii, such as mango, guava, or green tea, or a combination, such as root beer ice over vanilla ice cream. Beyond the storefront, Shave It also purveys the frozen concoctions on the go, thanks to a mobile truck that is often spotted at beaches and parks, unless its cloaking device is turned on. They also donate a percentage of their sales to their foster-child foundation, Foster a Miracle.
Chefs at La Cocina pick fresh ingredients sourced from the surrounding area to build Mexican and Cuban plates as colorful as the eatery's bright orange walls or a firework-filled piñata. After rounds of fresh ceviche or ham croquetas, rustic wooden tabletops fill with made-to-order rice dishes such as the palomilla empanizada—thin-pounded top sirloin steak breaded and pan-fried—or stone mortars known as molcajete filled with chorizo or seafood and fresh cheese. For dessert, chefs hand-craft creamy flan or natural shakes made with mango or tropical mamey fruit. A tiled chair rail runs along the restaurant's tangerine walls, which are studded with Mexican-style art and framed photographs of famous burritos that have visited the restaurant.
When he cofounded his first sandwich shop in 1965, 17-year-old Fred DeLuca planned to use his profits to pay his way through medical school. But the combination of quality ingredients and friendly service at the shop—then called Pete's Subway—proved so popular that nine years later, he and his partner found themselves in charge of 16 locations across Connecticut, and Fred left behind his doctoring plans for a career in business.

Despite their restaurant's moniker, the chefs at Johnny Rebs' Southern Roadhouse aren’t averse to local ingredients. In fact, all their produce comes from California growers. But rather than recreate Southern flavors, they prefer going straight to the source, relying on Virginian and North Carolinian farms to send country hams and Delta farms to send catfish. Said catfish simmers beneath mountains of slaw in po’ boys, one among Johnny Rebs’ many housemade Southern staples, which range from creole shrimp over cheddar grits to pulled pork slow-smoked up to 12 hours.
Though steeped in traditional Southern cooking, Johnny Rebs’ critically acclaimed culinary team puts its own twist on Southern and American staples alike. To wit: grilled cheese made with pimento and jalapeños, as well as deep-fried apple pie, which bubbles in a deep fryer stolen off a Georgia windowsill. Complemented with “suds” and “squashed grapes”—Johnny Rebs’ speak for beer and wine—feasts unfold amidst a rustic dining space made to resemble a cozy, wood-paneled home. Before the table fills up with smoked and fried meats, guests can snack from a bucket of peanuts. They're free, but any quarters diners donate in return go straight to charities such as the Granite Mountain Hotshots.
