The Kajama's white masts billow in the wind as its sharp prow cleaves the waters of Lake Ontario. The three-masted, gaff-rigged 164-foot schooner casts the same striking silhouette as it did 85 years ago during its first incarnation as a trade ship that sailed from Spain to Norway. Today, Great Lakes Schooner Company has restored the German-built schooner to its maiden-voyage splendour. Though they've preserved the boat's 1930s charm, they also retrofitted the Kajama for its daily tours with such amenities as a licensed bar and galley where cooks bring selections from their menu of pub fare to life. Though it serves as the crown jewel of the fleet, the Kajama is flanked by two other ships. Panoramic lake views and a retractable top-deck roof characterize the Obsession III, whereas the Challenge boasts two LCD TVs and a full-service bar. Great Lakes Schooner Company rents out their fleet for corporate cruises, charter tours, weddings, and pirate-school reunions, all of which launch from the scenic downtown harbourfront.

Wineries are often found far down country roads, shrouded by the curling tendrils of their vineyards. At The Wine Garden, though, the entire winemaking experience can be had without setting foot outside of the city. Yeast bubbles busily in stainless-steel fermentation vessels, transforming the juices of grapes from fertile regions of Chile, Argentina, and California. The fermentation process yields wines that range from crisp chardonnay to heady cabernet franc, the progenitor of cabernet sauvignon, and oak barrels bestow some of the elixirs with a rich maze of tannins. Fruit wines made with peaches, cranberries, or strawberries make refreshing summertime drinks and help work friends mingle with hummingbird friends at parties. Patrons play a major role in the entire process, selecting grapes and siphoning finished wine into bottles. The Wine Garden's gourmets also brew craft beers and stock hot sauces with humourous names such as Blair's Chipotle Death Rain.

When Colio Estate Winery opened in 1980, they were the first winery in the area to seek a license since prohibition was lifted. This is surprising, since these vineyards lie on the same latitude as famed wine regions in northern California and Tuscany, Italy, which indicates that the regions could have similar growing climates. The area also boasts lush, fertile soil and a growing season longer than most of Canada, making it a favorable place to ripen grapes. Today, Colio Estate Winery produces more than 400,000 cases of wine per year, including big red wines and refreshing whites. Knowing collaboration is key in the winemaking process, winemaker Lawrence Buhler and vineyard manager Kevin Donohue work in tandem to produce high quality wines in varietals such as Sauvignon Blanc, Riesling, Merlot, and Cabernet Sauvignon. Guests at the winery can learn about their process on tours, wander the vineyard, or recline in the outdoor pavilion to enjoy glasses of wine in the open air.
