Kaizen Fusion Roll & Sushi intersperses inventive sushi rolls with Japanese entrees, finger fare, and half a dozen sakes served hot or cold. A wood-framed, square sushi bar dominates the space, backed by an accent wall that captures the shimmering hues of a flame. Patrons can sidle up to the sushi bar to enjoy seaweed cylinders flung into their mouths directly from the chefs’ knife, or settle at a table along a chartreuse wall. In addition to using fresh fish, the restaurant's sushi selection reverses traditional rolls with ingredients such as Korean-style barbecue short rib or pickled pumpkin. Today, the duo’s award-winning eatery Hash House A Go Go has expanded from its original San Diego home into five Vegas locations, including a spot inside The M Resort Spa & Casino Las Vegas. Drawing from his work with agriculture and livestock, chef Beardslee kicks up house-made farm favorites, adding innovative flavors to fried chicken, french toast, and meatloaf recipes. The generously portioned entrees pair well with creative concoctions, such as a BLT bloody mary, a far more successful drink than its predecessor, the grilled-cheese martini.

Two years ago, pub-patriarch Doug MacDonald realized his dream of a Sinatra-themed time capsule when he created Daddy Mac’s. Gaming and dining mingle in the dusky interior, with daily gambler's specials and the menu's full house of rib-stickers, including Daddy Mac’s cheeseburger, a 12-ounce butter burger with lettuce, tomato, a pickle, and fries ($12), and a roulette wheel of pizzas on secret-recipe dough ($12–$14). Breakfast omelets ($7) and evening entrees such as linguine scampi ($14) all vie for face time with discerning diners.
