Meats include hand-pulled pork ($7.99–$9.99), beef brisket ($8.49–$10.49), and smoked turkey ($8.49–$10.49). Saddle up some sides on that mountain of meat with the popular smashers (potatoes), baked beans, coleslaw, fresh veggies, and more. There are also combo platters for the indecisive or those who want a multi-meat explosion. Wallaby's also serves many salads ($6.99–$9.49), salmon ($12.99), and shrimp on the barbie ($11.99).
There are knives on the tables at Rib City Grill, but you won't need them if you order the baby-back ribs. These ribs are basted in signature barbecue sauce, smoked until they're fall-off-the-bone tender, and then slow-cooked over hardwoods. They instruct classes such as Discover Scuba Diving, where be-finned students try breathing underwater for the first time. During Advanced Open Water classes, more experienced divers earn certification across five dives at locales such as Sand Hollow and the California Channel Islands. They also rent out gear such as regulators, oxygen tanks, and wetsuits. Additionally, the trio’s team of in-house certified technicians fixes nearly all makes and models of scuba and snorkeling equipment with a simple twitch of their nose.
Event hosts can quickly and easily decorate the walls inside Big Screen Event Center, a facility that hosts business meetings, banquets, birthday parties, and other types of gatherings. That's because projectors display custom images, videos, and presentations on 12 massive screens. Rentals of the space also include use of the sound system, tables and chairs, the kitchen area, and devices such as Xbox Kinect game systems and disco balls. The larger room holds up to 200 people seated in chairs, up to 105 seated classroom-style, and up to 175 seated at banquet tables—or nearly three times that many if you force family members to sit on each other's shoulders.
