Red paper lanterns hang from Chapter Two California Kitchen's interior, illuminating a yellow dining room where American and Thai flavors collide. The fusion eatery's Heart Attack sandwich, for example, is pure Americana: country-fried steak with white sauce and grilled onions, all between two golden slabs of garlic bread. However, the menu also brims with Thai staples, from pad thai and pad see ew to jok?rice pudding with a savory twist.

Yellow, green, and red curries bubble slightly in pans, ready to be poured over pieces of pork and shrimp. Nearby, chefs flip teriyaki-glazed salmon filets and barbecue chicken on the grill inside Thai California Kitchen. They also pan-fry noodles and sauté proteins in a variety of dressings including peanut sauce or Thai chili paste.

Thai food is celebrated for its complex, layered flavors, and Bangkok Blue Thai Cuisine's food is no exception. Its chefs stir-fry chicken with garlic and chilies for an intense yet pleasant burn, and add a touch of sweetness to deep-fried squid with their housemade sweet chili sauce. Many of their dishes use flavorful broths or curries, such as their intensely flavored hot-and-sour soup or massaman curry, a Southern Thai specialty.

The desserts also employ many flavors. Chefs toss sticky rice with sweet coconut milk and tangy slices of mango, and buy bananas shots of rum to create drunken banana flambes.

For more than 20 years, the family-owned and family-oriented Thai Specialty has warmed diners' mouths and bellies with traditional Thai spices and sauces. Salmon sauteed with a spicy white wine sauce rests over a bed of spinach, and whole fish absorb the vibrant flavors of spicy apple and ginger-chili sauces. Items such as fruity smoothies are available with appetizers before your meal, and mango sticky rice or coconut ice cream are available for dessert. The menu calls out dishes' spice levels with a helpful red-chili scoring system, with one chili meaning spicy, two meaning very spicy, and one and a half meaning that someone took a bite out of the menu.

Q&A with Valerie Moore, Owner/culinary Artist

What sets your business apart from your competition?

My business is one of only a few unique to Southern California that provide in-home instruction and demonstration cooking parties. Our menus include recipes that have been handed down from generation to generation. We offer a menu that ranges from comfort Soul Food to Thai Food with a twist.

What was the inspiration for starting this business?

I decided to start this business after completing my cookbook titled _The Dish, which is a collection of short stories and recipes that speak to how I came about developing and obtaining some of the family favorites. Completing the cookbook made me realize how great it would be to share the recipes with a live audience participating._

What?s your favorite part about your job?

The opportunity to create meals for people who enjoy the art of cooking, and to meet and make great friends.

Is there anything else you want to add that we didn't cover?

We like to tailor our menus to satisfy the client's desired atmosphere. We interview the client about their intended guests and the vibe they would like to create for the special event.

Q&A with the Owner / Manager

What is one of your most popular offerings? How is it prepared?

Pad Thai is our most popular noodle dish. Stir-fried rice noodles with chicken, shrimp, egg, green onions, bean sprouts and our special blend of spices, then sprinkled with ground peanuts.

In your own words, how would you describe your menu?

The most popular dishes of Thai food are selected in our menu with variety of flavors. Many beneficial herbs, spices ,and seasonings such as ginger, basil, galangal, garlic, fresh chili, [and] lemon grass ... are used in our dishes.

Is there anything else you want to add that we didn't cover?

The taste of Thai dishes mainly depends on the freshness of ingredients, the harmonious blending of poignant flavors, and the method of cooking that has been handed down for generations. We cook the way we eat at home and take spice very seriously. For our cooked to order menu, the customer can specify a spicy level as No Spice, Mild, Medium, Spicy or Fire.
