  • Hangar 24 Craft Brewery, LLC
After an afternoon of flying, Ben Cook looked forward to meeting his fellow pilots in hangar 24 at the Redlands Municipal Airport and swapping stories, listening to music, and sharing a few bottles of his latest homebrewed beer. These afternoons served as the inspiration for Hangar 24 Craft Brewery, which Ben founded directly across from the airport as a place where friends could unwind and enjoy a few pints of locally inspired microbrews. Hangar 24 Craft Brewery on... Its most popular beers: It's a tossup between Orange Wheat, the American-style wheat beer with pur?ed, locally grown oranges added throughout the brewing process and the bold, hoppy Double IPA, which features locally sourced orange blossom honey and four varieties of American hops The importance of using locally sourced ingredients: Hangar 24 Craft Brewery describes its method as farm to foam. This means that the staff seeks out ingredients from regional producers whenever possible, such as the oranges it gets from Inland Orange Conservancy, a nonprofit co-op for local farmers. The brewery obtains its dates from Coachella Valley, spruce from the San Bernardino Mountains, pumpkins from Redlands, red wine grapes from Temecula, and apricots from the High Desert. Its special events: Live musicians perform every Wednesday evening, and the brewery hosts trivia nights on the first and third Tuesdays of each month. Every Friday, the staff also taps a new cask-conditioned release. The Beer Selection Hangar 24 Craft Brewery offers seven staples year-round?including the Orange Wheat and Double IPA?although it regularly updates its tap list as new brews become available. This list can feature seasonally inspired creations, selections from the Local Fields series of beers brewed with locally sourced ingredients, and limited-edition, barrel-aged releases. Not content to limit the focus of their selection, the brewers craft everything from German-style lagers and Belgian-style dubbels to family-friendly, non-alcoholic root beer and ginger beer.

  • Ritual Brewing Co
Steve Dunkerken and Owen Williams began making beer together in Dunkerken's garage. Their new operation is a little bigger?23,000 square feet, to be precise, including a 30-barrel brewhouse. They didn't make the jump from home brewing to production brewing blindly, however. When the two met, Williams was the first-ever Director of Brewing Operations for BJ?s Brewhouse, and a little skeptical about the homebrew scene. But Dunkerken's creativity won him over. The brewery they founded, Ritual, produces complex, interesting potions such as the Big Deluxe Imperial Oat Stout?"so dark it actually absorbs light," as the brewers put it?and the Extra Red Ale, made with eight different malts and a massive helping of hops. Most of Ritual's beers are destined for bars, restaurants, and the swimming pools of millionaires, but there's also a taproom tucked away inside the brewery. There, live music often adds to the festive environment, and knowledgeable beer guides lead tours and share facts about the brewery's design, including tables crafted from 1960s-era bowling lanes.

  • Wild Donkey Brewing Co.
The colorful tap room at Wild Donkey Brewing Co. is a hub for socializing. Sometimes that's due to scheduled parties and other events, or perhaps it's simply because of the beer. The Redlands craft brewery prepares nine year-round and two seasonal brews, each of which is served on-site from a row of wall-mounted taps. The selection includes a hefeweizen brewed with lemon and peppers, a black IPA stuffed with citrusy hops, and an American-style stout brewed with whiskey. Every beer is also available in a keg, and can be poured into growlers to go.

  • Packinghouse Brewery
Named in homage to Riverside, California's turn-of-the-century citrus packinghouses, this microbrewery handcrafts four year-round beers. The easy-drinking Bell Tower Blonde pairs perfectly with a summer day. The Heritage Pale Ale and the Riley's Red Ale round out the year-round offerings. Besides the core four, the brewery creates an ever-expanding series of IPAs, as well as several specialty and seasonal libations. Inside Packinghouse's tasting room, bartenders pour pints of each day's available brews, which are also available to take home by the bottle and growler.
