Future owners Todd Carden and Brent Norton were working at Maritime Pacific Brewing Co. when they met, as was future head brewer Doug Hindman. On July 11, 1997, the trio decided to venture out on their own. Read on to learn more about their burgeoning brewing empire: The pub has two sister locations. They’re in Lake City and West Seattle, and if you connect all three points on a map the outline looks suspiciously like a triangle. Most of the beer begins with the same foundation. The brewmasters start with organic malt for all of their year-round beers and most of their seasonal recipes. Brewing happens twice a week. The original West Seattle brewery churns out 200 gallons, while the Burien brewery produces 300. Both batches rest in cellaring tanks for four weeks before reaching your glass. The process results in seven year-round beers. These include the No Doubt Stout and the Luna Weizen, an American-style wheat beer made with organic malt imported from Germany. This commitment to sustainability extends well beyond beer. The pub menu features free-range chicken and all-natural beef, as well as buns baked with spent grains from the breweries.
