The galleys at Joe’s to Goes garner gastronomically satisfied grins by housing a menu of handheld hunger stavers. Like a mom-piloted spoon-airplane, two toasted sesame-seed buns shepherd the half pound of ground beef, plus lettuce, tomato, pickle, onion, mayonnaise, mustard, and ketchup cargo, inside Joe's original hamburger ($4.99) to eager cuisine landing zones. There is an additional charge for cheese, bacon, and extra toppings. The low-carb half-pound bacon cheeseburger, meanwhile, flavorfies the palate with gooey cheese melted over crispy bacon ($4.69). A troop of thick-cut steak fries shimmering in special seasonings rallies starving stomachs or buttresses burger-based hunger quenching, and a refreshing soft drink washes away all memories of previous meat deprivation and can be used as drinkable ink for napkin notes written with a fry.

Q&A with Maria, Owner

What sets your business apart from your competition?

We are the only business in the Greater Atlanta area that produces fresh mozzarella and Italian-style stretched cheeses, such as burrata and scamorza.

What was the inspiration for starting this business?

We decided on a mozzarella business, as we could not find any good mozzarella in or around Atlanta. So, first was the need. Second, I grew up in the Campania region of Italy and my next door neighbor had a buffalo mozzaralla farm. This reminds me of all the beautiful things of my childhood and the smell of my mom's kitchen.

Is there anything else you want to add that we didn't cover?

Our fresh mozzarella is all natural [and contains] no artificial ingredients or preservatives. And it is vegetarian, because it is made with a vegetable rennet (cheese starter).

What is the best reaction you?ve ever gotten from a customer?

We have customers that buy from us every week of the year, and I think this is the best reaction you can expect.

What?s your favorite part about your job?

Seeing the happy and surprised face of the customers when they first try our cheese.

Growing up in New Jersey, Tom Tillotson loved New York–style pizza from birth. But when he move to Atlanta in the 1980s, he found himself bereft of that perfect combination of flaky crust, savory sauce, and fresh cheese plucked right off the tree. Facing a life without New York's most foldable delicacy, Tom decided to take matters into his own hands. Swapping recipes with master chefs from across the East Coast, he cobbled together an authentic New York pizzeria for the Empire State of the South. Today, Enzo's Pizza serves pies that would even please Fiorello Laguardia; whether it's the meat-laden Goombah or the pesto-kissed Paisan, every pizza comes in NYC-style Neapolitan and the thicker, heartier Sicilian preparation.

Uncle Vito's N.Y. Pizza brings hand-tossed, thin-crust slices of New York to Snellville. Above the eatery's red booths and jockeying taxicabs, photos of New York landmarks and sports teams evoke the Big Apple's neighborhood pizza joints. A stone oven vents the aroma of Neapolitan and Sicilian pies coated in house-made sauce and ingredients such as garlic, chicken, and artichokes. Pasta, parmigiana sandwiches, and salads round out the menu of casual Italian fare, with cannolis, tiramisu, and wine for dessert.
