When Spokane natives and Adelo’s Take-N-Bake Pizza owners Matt and Kim Howes decided to open their restaurant in 2008, they wanted to offer, in their own words, "great pizza at a great value." After four years and gaining a following in the community, Adelo’s Take-N-Bake Pizza continually strives to appease. Customers can construct their own pizzas, matching four types of crust, including their very own gluten-free, with six house-made sauces, hand-grated 100% whole-milk mozzarella, and more than 25 toppings. The gluten-free option came about when they discovered Kim’s gluten allergy, and, as a result, they knew they would have to adjust their approach to pizza. However, instead of simply declaring the pies off-limits, they spent their time in the kitchen tweaking recipes and researching alternative ingredients that would keep their slices both delicious and healthy. The result was a gluten-free dough derived from rice, potato, and tapioca flours that helped bring pizza back into the lives of celiac sufferers and earned the restaurant accreditation through the National Gluten Intolerance Group in 2011. Today, that dough forms the basis of their gluten-free specialty pies, which range from the pineapple-sprinkled Hawaiian and creamy garlic chicken to the jalapeno burn packed with peppers and spicy sausage. No matter what pie they choose, customers can also complete their meals with a six pack chosen from the shop's large selection of mix-and-match micro brews, which also include gluten-free beers from forward-thinking brewers such as Bard’s Tale Brewing Company.

The staff at Black Tie Coffee & Bakery make all their selections in-house, roasting their own blends of coffee and experimenting in their kitchen to create a roster of 20 original scones. This do-it-yourself attitude has resulted in fan-favorite concoctions such as complex double dark chocolate with cinnamon, cherry, and a dash of chipotle, and yerba mate tea blended with honey and vanilla until it reaches a smooth frappuccino consistency. Alternatively, traditional americanos and cinnamon-spiked espressos sate drinkers with less of an appetite for sugar. Freshly roasted beans are kept in stock for customers who prefer to make their drinks or eat handfuls of caffeinated beans at home. Guests can complete meals with bagel sandwiches and the house’s signature scones, which staff bake every morning in eight daily flavors, such as wild-berry lemon and almond poppy seed.

?It?s exciting, we want people to come and try another culture?s food," said Matavee Burgess in an interview in the Spokesman-Review. Matavee, a native of southern Thailand, and husband Tom own the four outposts of Thai Bamboo, and serve up a menu of authentic cuisine made from fresh, healthy ingredients. Each restaurant is carefully adorned with decor that transports guests to Thailand, from bamboo-lined walls to hand-made statues and custom-made tables featuring Thai carvings. Diners can count on classic dishes such as phad thai and coconut curries, in addition to a wealth of seafood and vegetarian entrees.

Flamin' Joe's loves chicken wings, slinging the pub staple in increments of anywhere from 6 to 200 bone-in and boneless wings accompanied by an array of sauces and seasonings. Aside from each family-friendly location's over 20 HDTVs, special-recipe sauces, ranked from the mild Naked to the extra-hot Widow Maker, provide zesty alternatives to milder rubs and sauces such as orange-ginger, mango-habanero, and huckleberry barbecue. Draft beers, such as PBR and Full Sail, also complement sandwiches such as The Hangover burger, a juicy burger topped with an egg, bacon, american cheese, and Joe's code 3 sauce.
