When Nana and Papa Varallo brought winemaking to America from Italy, they unknowingly brought a livelihood for their successors. Son Nicholas made wine in Papa's basement from the age of 8, then taught the techniques to children Dominic, Cristina, and Americo Varallo. Now all three generations contribute to the development of the family's Spring Lake Winery, which offers group vineyard excursions, rentable wedding space, and, of course, the Varallo's award-winning wines.
To the Spicola family, wine isn't simply something sipped on at dinner or during a party. Rather, it's the family heritage, which forms a bridge between generations. After a visit to the press room, where vintners do their grape-squeezing and movable type-shuffling, guides usher guests into the neo-Norman barrel cellar, a cooled concrete vault filled with litres of libations aging in oak barrels. From the ceiling hang 23 stainless steel chairs bearing etchings recounting the ancestral origin myth of the winery's proprietors, the Pillitteri family, two generations of whom remain active in the estate's day-to-day operations.
Under the direction of master winemaker David Johnson, the team behind Rootstocks celebrates wine by leading clients through vine-to-bottle experiences at its pesticide-free vineyard. Members participate as much or as little as they like in producing their own wine, joining any part of the year-long process that includes barrel sampling in the winter and crop thinning in the summer. Located on 10 acres in Niagara wine country, the red clay soil nourishes grapes such as cabernet franc, chardonnay, and pinot noir, all of which Rootstocks’ team helps visitors turn into their signature blends.
