When Enchanted Manor Winery's chief mead-maker handcrafts his honey brew, he follows a recipe from a 17th-century cookbook from the court of King Charles I. These medieval techniques inspire the winery's special mead for the annual Texas Renaissance Festival, which is brewed from Texas wildflower honey and sipped from knightly knee cops. Enchanted Manor also whips up modern meads flavored with orange blossom and oak, mixed with pear wine, or brewed from the honey of the guajillo flower.

In addition to its signature meads, Enchanted Manor Winery whips up small batches of wines from grapes, peaches, and other fruits, and augments their stock with bottles from nearby wineries. Enchanted Manor also hosts special events such as sangria nights, mead tastings, and wine classes.

Decades before opening the doors on his own sub shop, Len Moore was cutting his teeth on the lower rungs of the restaurant ladder. But, while he was running between busy tables as a busboy and fighting for a promotion to dishwasher, Len kept his eyes and ears open, slowly piecing together bits of kitchen wisdom that would eventually find their way into the sandwiches he makes today.

At Lenny’s, freshness comes first; sub rolls rise in the oven each morning, and the sandwich crew carves deli meats and cheeses for each order. The menu lists gargantuan favorites—large subs weigh in with a full pound of meat—including philly cheesesteaks, half-pound hot dogs, deluxe club sandwiches, and classic ham and capicola. Each sandwich is also willing to join up with combo standbys including drinks, chips, and cookies baked by each franchise owner's grandmother.

The legacy of Kim Son restaurants owes its origins to the memory of its matriarch, Kim Su Tran. When "Mama La" and her husband fled Vietnam in 1980, she brought with her more than 250 recipes, each stowed safely in her mind. She also brought her seven children, four of which—Tan, Tri, Tony, and Tao—now watch over the business and coveted family recipes. Among their shared vision is Kim Son Cafe, which breaks from its predecessors by way of a simplified menu and the inclusion of sushi. Though the menu is simpler, the flavors are just as complex, showcasing ingredient orchestration in dishes such as coconut curry shrimp wound up in strands of spinach linguini. The menu even boasts a Vietnamese take on fajitas, giving guests rice paper with which to wrap marinated meats and veggies or write love letters to their mouths.
