The son of parents who operated a successful Calgary pizzeria, John Papoutsakis grew up surrounded by expertly tossed dough, artfully sprinkled cheese, and traditional toppings. With Sophie's Pizza, opened in 2004, John marries the traditional Greek-style pizza of his folks with contemporary variations and flavours available via takeout and delivery. More than 20 specialty pies arrive fresh from the oven with premium ingredients such as Atlantic Bay shrimp, hot banana peppers, and flax crust adorning or flanking its foundation of mozzarella cheese and sauce made from scratch. Rather than attempting to snag their preferred pies from a claw-crane arcade game, customers can verbally request their favourite combinations to customize their medium, large, or extra-large slices. Feasters supplement tasty pizza treats with five pastas baked fresh to order, four healthy salads, a pound of oven-roasted wings slathered in four flavourings, breadsticks seasoned in herbs or garlic, and a trio of sweet-tooth-satiating desserts.
