Daruma Ramen: A User’s Guide
- Shio Ramen with homemade chicken stock, chicken chashu, and wakame seaweed
- Veggie Miso Ramen with fried tofu skin, scallions, and chili oil

Atmosphere: cozy, with natural wood surfaces and simple floral wallpapers that evoke traditional Japanese design.
Good to Know: Since Daruma Ramen’s noodles are tapioca-based and egg-free, the veggie options are not only vegetarian, but vegan.
Shoyu: a Japanese soy sauce made from both soya beans and wheat (as opposed to tamari, which is only made from soya beans)
Chashu: Japanese cooking method of rolling cuts of chicken or pork belly and simmering them in a mixture of soy sauce, sake, and ginger
