Yuen Yung, with his brother Peter, opened How Do You Roll? in 2008 after feeling uninspired by fast food chains and the limited options they offered. The brothers went into business with the goal of creating one of the first fast-casual, sushi inspired restaurants. Yuen and Peter took an innovative lead with interesting dishes like sushi burritos, salmon poke, and sushi baos. For those intimidated by raw fish, the brothers also serve up savory offerings like stuffed avocados and grilled chicken rolls.
