Royal India chef and owner Vir Singh honed his talents at restaurants throughout India and the U.S., all the while tuning many of his recipes to his home country's regional styles. For many dishes, the kitchen fires up halal meats in a tandoor oven before plating them in surprising ways. Specialties include butter chicken spiced with fenugreek, ginger, and cilantro as well as curries such as super-hot vindaloo—a blend of red chili, bay leaf, peppercorn, and red-wine vinegar. The bar list is refreshingly long, encompassing everything from signature martinis to single-malt scotches.
