Rick Pasche, president of Redline BBQ Smokehouse & Catering, describes his restaurant's food as Texas-style barbecue with Cajun influences. This Texas taste comes from the burning hickory wood that the staff uses to smoke all of its meats, from brisket to chicken, each of which comes with a homemade side. The Cajun touches manifest in the sauce selection, an array of seven flavors ideal for spicing up some ribs or convincingly faking your purse's bloody murder. When asked how the sauces get their flavor, Rick merely replies, "secret family recipes."
