The folks at Scissors and Pie are on a mission. Their enemy is what they call the "evil pizza wheel," and they fight it by making pizza the old-fashioned way: hand-cut from square slices and priced by weight. Aside from being true to Roman traditions, this method benefits customers, who can choose to order a single giant slice or a number of smaller slices to sample the variety of pies available on a given day. Whether they're topped with salami or zucchini, all of the slices are baked until that precise moment when the dough rises softly and whispers, "I am ready to be eaten."
