In 2004, Bavarian-raised Florian Pfahler brought the bretzel to the city of Chicago. This close, but fresher, relative of the pretzel has been around for millennia, even appearing in early depictions of The Last Supper. Today, Pfahler serves his favorite bread across four downtown locations, where each bretzel is sliced and filled with organic, unprocessed ingredients sourced from Illinois farms and prestigious European vendors. At breakfast, bretzels don organic eggs and nitrate-free bacon or wildberry preserves paired with organic cream cheese. By lunchtime, a team of "Über Sandwich Makers" builds the Serrano ham and Manchego cheese sandwich, which was lauded as one of the best in the city by Chicago Magazine. Each meal can end on a sweet note with the shop’s signature wall of chocolate, which features gourmet bars from around the globe.
