Chef GuJuan Smith started his culinary career with the US Navy, where he worked his way up from cook to Galley Watch Captain. Smitty, as he's also known, now mans the grill at Smittys Taste Of The Bayou. There he barbecues ribs using a mix of charcoal, apple wood, and mesquite for a smoky flavor. He also serves up a rotating selection of Cajun dishes including crayfish étouffée and his signature gumbalaya—a combination of gumbo and jambalaya.
