To brewers George and Alex, local beer isn't a fancy marketing ploy. At CIB Brewery, the pair harvests and cultures their own yeast blends from inside the farmhouse-style brewery itself. These wild yeasts ensure a completely unique flavor that tends toward sweet and tart flavor profiles. The nanobrewery's past batches have included a barrel-aged imperial wild ale and the Zircon strawberry-tart ale—a Belgian-style Lambic with a strong, fresh-strawberry finish.
