Teiichi "Teach" Sakurai didn't set out to transform Japanese dining in Dallas. Or rather, he didn't set out to do it all at once. Over the past two decades, the man who food critic Bill Addison once called "Dallas's most courageous chef-owner" opened a string of successful restaurants, each of which focused on (and more or less introduced to Dallas) a different style of Japanese cooking: a sushi bar, a yakitori grill, and most recently a soba noodle house.
