Imported Spanish meats and cheeses star in many of Matador's small plates, but just as many options center on seasonal vegetables and herbs grown and selected by local organic-produce guru Tom Spicer. Esmeralda’s Bakery joins the charge to sop up any stray splotches of manchego sauce or white wine and chorizo broth with its artisan breads, and taps from local Deep Ellum Brewing Company line the full bar, whose tenders also shake rum, pisco, and sangria cocktails.
Between supersaturated red walls, live herbs sprawl from terra-cotta planters that section off long tables resembling picnic tables overfed on sandwich crumbs. Live flamenco music and soccer broadcasts on La Liga and EPL occasionally get toes tapping and kicking in sympathy beneath cocoa-colored banquettes.
