There is no specialty roll created by the chefs at Wasabi Roll & Go. Instead, they leave the creativity up to the patrons, who get to pick and choose which ingredients go into their pieces of maki. Guests select between a dozen proteins—such as spicy salmon and tofu—and myriad fillings, including soy garlic mushrooms, jalapenos, and cucumbers. Chefs finish each roll with a handful of toppings such as wasabi mayo or teriyaki sauce. Even the rice base is an option between sushi rice, steamed white rice, and steamed brown rice. Alternatively, guests can forgo the roll and eat their ingredients straight out of a bowl or golden chalice.
