“The menu is very simple, just like in Cuba," owner Tanya Suarez told the Des Moines Register. "I wanted to start with something simple, but also delicious." The process behind the dishes at Ceviche Bar is anything but simple, though. Tanya and her team put a lot of work into their Cuban pan-fried steak, pollo fricassee, and signature Cuban sandwiches. They even make their sandwich bread in-house. Of course, there's the namesake ceviche as well. While more of a Latin favorite than a Cuban one, it goes well with most everything on the menu.
