With neon lights reflecting off its shiny chrome exterior, the Nacho Bizness trailer is hard to miss. It's a good thing, too—a lunch along the Riverwalk would be a little less exciting without its unique takes on burritos and tacos. Though the 10'x6' mobile kitchen might be small, its menu isn't constrained by the borders of Mexico:
- A taste of Texas is delivered by the Dr Pepper–marinated skirt steak in the Rodeo taco, burrito, or salad bowl.
- The Caribbean shines through via tacos, burritos, and salads filled with grilled mahi-mahi, jerk chicken, or firecracker shrimp, all of which are topped with pineapple slaw. (A Puerto Rican–style quesadilla includes grilled sweet plantains.)
- Spicy Korean pulled pork with chilled cucumbers anchors the Yum Yum tacos and burritos. The combo can also be ordered in slider form.
The cooks also assemble chili dogs, more traditional quesadillas, and, for vegeterians, the Earthday—in which zucchini, squash, and black-bean salsa are bundled into tortillas. Meanwhile, their signature Chronic ginger lemonade complements each bite with a refreshing kick.
