Drawing inspiration from Thai, Greek, Latin, Italian, and American cuisines, the chefs prepare an ever-changing selection of classic comfort foods with a healthy twist. In addition to avoiding added sugar and refined products, they also incorporate as many organic grains, herbs, and vegetables as possible. Ground turkey provides a healthful alternative to red meats in dishes such as a shepherd's pie, joining sautéed onions and brown gravy beneath a crust of cheesy mashed potatoes. Similarly, quinoa and tofu can help add a welcome dose of protein without adding fat and cholesterol, the way meat can.
