When Wisconsin native Dan Schuman moved to New York, he was following his passions. But after nine years, he realized something was missing: Wisconsin dairy. Unable to shake his desire for frozen custard and cheeses, he opened 5 oz. Factory in Greenwich Village. The name refers to the portion size of the custard and to the amount of cheese in each one of his decadent grilled cheese sandwiches. The sandwiches redefine grilled cheese with premium ingredients including smoked provolone, PBR-soaked bratwurst, and roasted asparagus and mushrooms. Their savory flavors also pair well with custard concretes mixed with chocolate, Nutella, and peanut butter cups or a bottle of Specher's Wisconsin craft soda.
What makes these sandwiches and frozen desserts truly special is that they use milk and cheese from Wisconsin dairy farmers including Uplands Cheese, Bleu Mont Dairy, and Laclare Farm. This quality has been lauded in the media time and again. The Village Voice exclaims that customers "probably aren't going to want to split" the store's breaded cheese curds because they are just that good, while Zagat ranks the grilled cheese sandwiches among its top five in the city and claims they "[give] any melted cheese sandwich a run for its money."
