Chef Ralph Pagano has rubbed shoulders with some well-known friends in high-visibility venues. One such place was the set of Iron Chef, where he went head-to-head with Bobby Flay in a culinary competition. He also made a strong showing of his skills on Hell's Kitchen, where he impressed the judges—including Gordon Ramsay—enough to make it to the finals. But in founding Naked Lunch, his restaurant in Miami, Wynwood neighborhood, he decided to show a different side of himself that isn't always apparent in his celebrity-chef persona: that of his heritage, which is firmly rooted in the Greek diners and Jewish delis of New York.
At Naked Lunch, the fresh salads include classic chopped greens and Mediterranean selections like the fattoush, a medley of parsley, greens, cucumbers, tomato, and lemon dressing. And at the other end of the spectrum—past the gyros and deli-style sammies—are its organic, hormone-free burgers, which the kitchen dresses up with themed sets of toppings like horseradish sauce, provolone cheese, and caramelized onions in the Saloon burger.
