The Cider Press Café, Naples

It's fitting that The Cider Press Café takes its name from a clever culinary invention—an old apple press that sat in a barn belonging to co-founder Roland Strobel's parents. The cafe creates its gluten-free, plant-based, and locally-sourced dishes with its own high-tech gadgets, paired with the practice of molecular gastronomy. While the technology, from the VacMaster CryoVac to the Poly Science Smoking Gun, may seem space-age, the flavors couldn't be more familiar: sun-dried tomato marinara mingles with basil walnut pesto in the garden lasagna, salsa verde and pickled jalapeños add kick to the chipotle enchiladas, and bananas bring the requisite sweetness to banana splits.
