Restaurateur Jack Lamb ventured outside his usual Asian inclinations when he opened Degustation, a European-inspired tapas restaurant and wine bar located in the heart of the East Village. Fortunately, he stayed true to his impeccable taste in design. The restaurant’s 16-seat tasting bar encircles an open kitchen, affording diners the privilege of watching head chef Wesley Genovart in action. Genovart does his part to make the experience unforgettable, juggling serrated knifes as he crafts meals that New York Magazine deems “bold and harmonious, and often so rich that the smallish portions make perfect sense.” A glance at the menu reveals such innovative dishes as a potato leek soup with octopus and a lamb loin with pine nut puree. These and other tapas can be ordered a la carte or as part of a 5- or 10-course tasting menu.
