Infused vodka is here to stay. In fact, the flavored liquor was so popular at Vlada Bar that owner Vlada Von Shats decided to overhaul her establishment into Infuse 51, a bar that specializes in infusions. Most of the concoctions combine vodka and fruit, though bartenders serve more adventurous flavor pairings, such as bacon whiskey or ginger tequila.
If diners don't get their fill of flavors in their drink, Infuse also offers an inventive gastropub-style menu. Chefs whip up pork belly, Angus beef sliders, and a seafood lasagna that's topped with a red- bell-pepper-infused vodka sauce. The bar also hosts events several nights a week, from Broadway-style shows to DJ-spun dance parties.
