Bryan Steelman never would have been inspired to open his restaurant, ¿Por Qué No?, if he hadn’t experienced a life-changing meal in a small Mexican town. And he would never have experienced that life-changing meal if the leaky gas tank in his boat hadn’t left him stranded on the beaches of Mexico. With only a backpack and a “why not?” philosophy, Bryan wandered inland to Morelia, where a lively meal inspired his eureka moment. The flavors of the food, the vibrant colors of the restaurant, and the energy and unpretentious vibe of the people all inspired him to make a major change to his life’s plan. “Literally, I took a bite and I said, ‘I’m going to open a taqueria when I get home,’” he told _The Oregonian_ in 2009. And thus ¿Por Qué No? was born, his best replica of that fateful meal with a few Pacific Northwest twists, such as recycled furniture and meats and produce from local farms.
