Italian cooking is steeped in tradition—and so is Firehouse, one of Portland’s best Italian restaurants. Its structure was built in the early 1900s as Firehouse 29. The main room was originally a stable for fire horses, although they were replaced with trucks in the 1920s. A massive renovation project took place in 2007, and now that main room is a dining area. Visitors eat surrounded by walls of bare wood panels, studded with scars from the heavy brass fittings at the ends of vintage firehoses.
