Rolling up to the Highway Hibachi restaurant might be confusing at first—until you learn that its name stems from a food truck that had success out on the pavement. The fast-casual eatery, which echoes the fiery design of the mobile kitchen, turns up the hibachi grills to sear steak, shrimp, salmon, and teriyaki chicken. Those tasty morsels are then served with the traditional accompaniments: soup, salad, fried rice, and veggies. The menu also features fried-rice entrees and the occasional fusion plate, like lobster-roll tacos and Asian-inspired orange cannolis.
